Cooking instructions:
Prepare the oven by preheating to 180°C.
Dry the tomahawk rib-eye steak by patting it with paper towels
For seasoning use truffle, salt, and freshly ground pepper generously. After that leave the steak until it gets to room temperature.
In the meantime, take the garlic and cut ½ centimeter off the top. Soak in olive oil, and then roast the garlic in a foil tent for 30 minutes until the garlic feels soft. Take it out from the oven and let it cool down.
Take a moist paper towel and put it around the tomahawk steak’s rib bone. Use aluminum foil to cover the paper towel completely. This is what steakhouses do to make the bone look more appetizing when they serve a whole steak to an individual customer.
Use an oven-proof pan or skillet to heat two tablespoons of olive oil until it starts to smoke. Place the steak into the pan and sear for 60 seconds. Make sure you keep your distance as the oil will spatter a bit. Reduce the temperature to moderate heat and continue cooking the steak for another five minutes. Just leave the steak without touching it.
Use tongs to turn the steak and cook it for another three minutes.
After placing the steak on a baking sheet, put it in the oven and roast it for 10 minutes.
Check the steak’s temperature with an instant-read thermometer: 57°C for medium and 52°C for medium-rare. While the meat rests it continues to cook internally and increases in temperature by several degrees.
Meanwhile, add butter to the pan and let it melt using medium heat.Take the roasted garlic and squeeze the cloves into the butter along with the thyme while stirring with a wooden spoon.
Take the steak out of the oven when it’s ready and place it back in the pan. Spread the garlic and butter over the steak using a spoon. Flip the steak and apply the garlic and butter again. After that, use a foil tent on a cutting board to let the steak rest for 10 minutes.
Remove the optional paper towel and foil from the bone now, should you have used that step.
After cutting the tomahawk rib-eye steak, apply more blue cheese, garlic, and butter. If it is meant for a single person, before serving just pour the blue cheese, garlic, and butter directly over the steak and enjoy!
